I love cooking Mexican inspired food, it’s healthy, quick and simple to make, delicious and perfect for a group. I previously posted a recipe for great Tuna Tacos, today’s recipe has the same sides but just substitute the tuna for catfish (which is cheaper and more sustainable).
What you need:
- Catfish fillet
- Lime zest
- Cayenne Pepper
- Ground Coriander
- Salt & Pepper
- Tortillas
- Rocket
- Sliced Cherry Tomatoes
- Fresh Coriander
(For the sauce)
- Natural Yoghurt
- Chipotle Sauce
- Minced garlic
Recipe:
- Mix the lime zest, cayenne pepper, ground coriander, salt and pepper in a bowl and rub the catfish with the dry rub. Leave for at least 30 mins for the flavours to mix.
- Heat the tortillas in the oven (160C).
- Gently pan fry the catfish fillets in a frying pan over a medium-high heat, until the fillets are browned.
- Serve with warm tortillas, rocket, cherry tomatoes, coriander and a drizzle of sauce.
This recipe can transition from day to night; lunch to dinner and it’s a guaranteed crowd pleaser! Delicious!
